Question: If we offer similar, but different services (ie horse riding lessons, horse boarding, horse training…), and run an ad for some of these, should we should have a unique landing page for each of these? If so, should each of these landing pages NOT be linked from elsewhere on the site (ie if someone visited the site without using the paid ad)?
Answer: Ideally, your PPC landing pages should be tightly focused on your target keywords. Especially for different things… Horse riding lessons is a very different subject than Horse boarding. So I would definitely split those into separate landing pages, each with a defined ACTION that you want the person to do.
As for your second question, ALWAYS exclude your PPC landing pages from SEO traffic by using the robots.txt file. This is for your metrics – in that way, then you know which traffic is FREE (SEO generated) and which is PAID (AdWords generated).
