Question: Should you have your phone number in your title tag?
Answer: I revised your question a little, to add in the AdWords / Pay-per-click area. Should you include your phone number? For your TITLE tag, I would say I doubt it. Do your customers search for your phone number? If so, then you would want to include it. But I doubt it.
For AdWords / PPC purposes, however, including your phone number in your ad can be a smart move. For advertising, this might motivate people to call you and thereby avoid the pay-per-click charge. Some people do this, and thereby avoid paying quite so much per click by Google. Others think this is a good idea because it makes your company look more customer service oriented, real, and/or responsible.
